Gỏi Gá Vietnamese Chicken Salad

UMAMI GOODNESS

Ingredients

- 3 cups of rotisserie chicken
- 4 cups thinly sliced green cabbage
- 3/4 cup shredded carrots
- ½ a thinly sliced red onion
- ¼ cup coarsely chopped cilantro
- ¼ cup coarsely chopped vietnamese coriander
- ½ cup coarsely chopped mint&
- ¼ cup green onion

For the dressing (for a batch, not single serving)

- ¼ cup fish sauce
- ¼ cup sugar
- 1 ¼ cup water
- Juice of 1 lime
- 1 ½ tbsp white vinegar
- 1 bird’s eye chili

Toppings

- 1 tbsp Mama Teav’s OG Hot Garlic
- 3 tbsp coarsely chopped unsalted peanuts
- ¼ cup fried shallots

    Steps:

    1. In a medium bowl, combine sugar, fish sauce, lime juice, vinegar, water and bird’s eye chili. Stir until the sugar is dissolved. 
    2. In a small bowl, mix fried shallots with Mama Teav’s OG Hot Garlic chili crisp
    3. In a large bowl, toss the cabbage, carrots, red onion, shallots, green onion, cilantro, Vietnamese coriander, mint, and shredded chicken. Add dressing and toss. 
    4. Top off with Hot Garlic shallots and peanuts.
    5. Serve with lime wedges and additional sauce on the side.
