Gỏi Gá Vietnamese Chicken Salad
Ingredients:
3 cups of rotisserie chicken
4 cups thinly sliced green cabbage
3/4 cup shredded carrots
½ a thinly sliced red onion
¼ cup coarsely chopped cilantro
¼ cup coarsely chopped vietnamese coriander
½ cup coarsely chopped mint
¼ cup green onion
For the dressing (for a batch, not single serving)
¼ cup fish sauce
¼ cup sugar
1 ¼ cup water
Juice of 1 lime
1 ½ tbsp white vinegar
1 bird’s eye chili
Toppings
1 tbsp Mama Teav’s OG Hot Garlic
3 tbsp coarsely chopped unsalted peanuts
¼ cup fried shallots
Steps:
- In a medium bowl, combine sugar, fish sauce, lime juice, vinegar, water and bird’s eye chili. Stir until the sugar is dissolved.
- In a small bowl, mix fried shallots with Mama Teav’s OG Hot Garlic chili crisp
- In a large bowl, toss the cabbage, carrots, red onion, shallots, green onion, cilantro, Vietnamese coriander, mint, and shredded chicken. Add dressing and toss.
- Top off with Hot Garlic shallots and peanuts.
- Serve with lime wedges and additional sauce on the side.
