Christina’s Khmer-Inspired Garlic & Lemongrass Grilled Chicken
Ingredients:

1.5 lbs chicken thighs or drumsticks (bone-in, skin-on for max flavor)

2 tbsp Mama Teav’s Hot Garlic (or more if you're about that life)

2 stalks lemongrass (white part only, finely chopped)

4 cloves garlic, minced

1 tbsp fish sauce
-
1 tbsp soy sauce
-
1 tbsp palm sugar (or brown sugar)

Juice of 1 lime

Optional: chopped cilantro and cucumber for garnish
Steps:

In a bowl, mix everything together (except the chicken) to form a marinade.

Add the chicken and coat well. Let it marinate for at least 2 hours—overnight is even better.

Grill over medium-high heat until golden, crispy, and cooked through (about 5–7 min per side).

Serve with jasmine rice, pickled veggies, and a little extra Hot Garlic on the side.
