Chinese Egg and Tomato Recipe!
::Chinese Egg and Tomato Recipe::
A family favorite. As you can see, its all smiles when Roe smells this dish!
Recipe:
Sauce: 2 tbsp ketchup, 1 tbsp Chinese cooking wine, 1 tbsp Mild Hot Garlic, 1/4 tsp sesame oil, 1 tap grated ginger, 1/2 tsp salt 1/2 tsp sugar
2 large eggs, beaten
2 Early Girl tomatoes, quartered
1 green onion, chopped
Fry scallions in a little oil, add tomatoes and sauté until soft and skin starts to separate. Add sauce and cook for a few more minutes and reserve. Soft scramble two eggs and add the reserved tomatoes. Gently combine. Spoon soft scrambled egg + tomato over the rice, top with more Hot Garlic and enjoy!
